Salted roasted mush recipe
The mush is one of the traditional delights of the Festa Junina, and it cannot be missing from your table. Whether sweet or salty, it is a delicious dish that can be prepared quickly and practically with guaranteed success!
This delicious interior delicacy has corn as its main ingredient and, in the case of the roasted salt mush recipe, you can include other ingredients, such as cheese and sausage, to make it more complete. The salted mush can be served as a snack, starter or to accompany your main meal, as if it were a creamy cornbread.

Ingredients for making salted roasted mush:
8 ears of corn
3 tablespoons of butter
1 cup of grated Minas cheese
1 tablespoon of baking soda
1 medium onion
4 eggs
2 garlic cloves
1 tablespoon of salt
1 cup of chopped sausage (optional)
50 grams of grated parmesan cheese
black pepper to taste
How to make salted roasted mush:
To make salted roast mush, start by cleaning the corn cobs, removing the straw and hair. Then, with a very sharp knife, separate the grain from the ear.
Tip: the corn for mush should be very soft and light yellow in color. You can replace the ears with 6 cans of drained green corn.
Place the corn in a blender with half a cup of filtered water and beat until a very dense mass is obtained. Add eggs and beat until well combined. Reserve.
Tip: at this point, preheat the oven to 180ºC (medium-high oven).
Finely chop the onion and garlic and cook over medium-low heat with the butter. Season with a little salt and cook until the onion is tender, stirring occasionally. If you want to use sausage in this recipe, let it sauté along with the onion. Turn off heat after braising well.
Tip: don't let the onion and garlic burn to avoid a bitter taste in this recipe.
Place the beaten corn in a bowl and add the Minas cheese, baking soda, onion, garlic and sauteed sausage. Mix everything and match the flavor with salt and pepper, if desired.
Transfer to an ovenproof dish, sprinkle with Parmesan and bake at 180ºC for 45-60 minutes or until it passes the toothpick test. When the center turns golden, your roasted salt mush is ready. Let it cool a little and it can serve. Enjoy your food!
